JAÉN Olives
FROM GENERATION TO GENERATION
The preparation of the Jaén olive has been passed down from one generation to the next in homes all over Spain, particularly in the south; crushing the olives slightly, without removing the stone, and using spices to produce a slightly bitter flavour.
The olives are also accompanied by fine pieces of red pepper with the same seasoning.
