Red Spring Onions
A DASH OF COLOUR
With its bittersweet taste, the Red Spring Onion is prepared by making just a few cuts to the onion, depending on its size, so as to leave the core intact. It is then flavoured with beetroot, hence its pinkish colour.
It comes from Valencia and can be found in a few other regions of Spain.
