FROM GENERATION TO GENERATION

The preparation of the Jaén olive has been passed down from one generation to the next in homes all over Spain, particularly in the south; crushing the olives slightly, without removing the pit, and using spices to produce a slightly bitter flavor.

The olives are also accompanied by fine pieces of red pepper with the same seasoning.
